But where do these sensations come from? And what do they really tell us about the oil\u2019s quality?<\/strong><\/span><span style=\"color: #000000;\"><em>From the Producer\u2019s Diary \u2013 The questions and curiosities that come up every day in our Lugano store.<\/em><\/span><\/p>\n<hr\/>\n<h2><span style=\"color: #000000;\">\u201cThis time, I\u2019d like one that\u2019s a little stronger.\u201d<\/span><\/h2>\n<p><span style=\"color: #000000;\">When we opened our store in Lugano, we noticed something right away.<\/span><\/p>\n<p><span style=\"color: #000000;\">Many customers were looking for gentle oils.<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>&#8220;Not too loud&#8221;<\/strong> was a request we heard frequently.<\/span><\/p>\n<p><span style=\"color: #000000;\">It was understandable. Those who are used to oils with a very mild flavor may find an extra virgin olive oil with a bolder character surprising at first taste.<\/span><\/p>\n<p><span style=\"color: #000000;\">A few months later, however, we are seeing something very interesting.<\/span><\/p>\n<p><span style=\"color: #000000;\">The tastes of various customers seem to be changing.<\/span><\/p>\n<p><span style=\"color: #000000;\">Our &#8220;Fruttato&#8221; is currently the best-selling olive oil in the store. Next are the organic variety, which has medium intensity, and the Leccino. And more and more people are also curiously trying decidedly bolder oils like Coratina and Geracese.<\/span><\/p>\n<p><span style=\"color: #000000;\">Yes, there&#8217;s another surprise.<\/span><\/p>\n<p><span style=\"color: #000000;\">Our <strong>Geracese Extra Virgin Olive Oil from Calabria\u2014 <a href=\"https:\/\/www.fondazioneslowfood.com\/it\/arca-del-gusto-slow-food\/grossa-di-gerace\/\">a Slow Food Presidium<\/a>\u2014<\/strong>is also generating a lot of interest: an oil with a particularly intense character, even more robust than Coratina.<\/span><\/p>\n<p><span style=\"color: #000000;\">We do not know if there is a single explanation for this development.<\/span><\/p>\n<p><span style=\"color: #000000;\">But there&#8217;s one thing we notice every day.<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Once you begin to learn about high-quality extra virgin olive oil, the way you taste it and use it in the kitchen changes.<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">That bitterness, which may seem unusual at first, begins to take on meaning.<\/span><\/p>\n<p><span style=\"color: #000000;\">That tickle in your throat\u2014which takes you by surprise the first time\u2014becomes a familiar sensation.<\/span><\/p>\n<p><span style=\"color: #000000;\">And so it happens that a customer who, a few months earlier, was looking for a light olive oil comes back and tells us:<\/span><\/p>\n<blockquote>\n<p><span style=\"color: #000000;\"><strong>&#8220;This time I&#8217;d like one that&#8217;s a little stronger.&#8221;<\/strong><\/span><\/p>\n<\/blockquote>\n<p><span style=\"color: #000000;\">But why do some extra virgin olive oils have a tingling sensation?<\/span><\/p>\n<p><span style=\"color: #000000;\">And above all: does that tingling sensation really mean the oil is better?<\/span><\/p>\n<p><span style=\"color: #000000;\">The answer is more interesting than a simple yes or no.<\/span><\/p>\n<hr>\n<h2><span style=\"color: #000000;\">First of all: if an extra virgin olive oil has a slight tingling sensation, it doesn&#8217;t mean it&#8217;s too acidic<\/span><\/h2>\n<p><span style=\"color: #000000;\">Let&#8217;s start with one of the most common misunderstandings we encounter.<\/span><\/p>\n<p><span style=\"color: #000000;\">When a person feels an oil stinging their throat, they might think:<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>&#8220;It&#8217;ll be too sour.&#8221;<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">In fact, you can&#8217;t taste the acidity of extra virgin olive oil.<\/span><\/p>\n<p><span style=\"color: #000000;\">Free acidity is a chemical parameter determined through laboratory analysis.
